How to Make a Simple Curry Without a Recipe

A curry doesn't require a recipe or twenty ingredients. It follows a simple structure: aromatic base, spices, protein, liquid, simmer. Once you understand the pattern, you can improvise every time.

Saute diced onion until soft, add minced garlic and ginger, then add your spices (curry powder is perfectly fine). Add your protein — chicken, chickpeas, tofu, whatever you have. Pour in coconut milk or crushed tomatoes, bring to a simmer, and cook until everything is tender. Taste and adjust: more salt, a squeeze of lime, a pinch of sugar. Serve over rice.
