Every good stir-fry needs a sauce, and once you memorize one ratio, you can make stir-fry any night without looking anything up. The formula: soy sauce + sesame oil + rice vinegar + garlic + ginger + a touch of sweetness + cornstarch slurry.
Mix together: 3 tablespoons soy sauce, 1 tablespoon sesame oil, 1 tablespoon rice vinegar, minced garlic and ginger, a teaspoon of honey or sugar, and a teaspoon of cornstarch dissolved in a little water. Pour it over your stir-fried vegetables and protein in the last minute of cooking. It thickens on contact and coats everything evenly. This works with any combination of vegetables, meat, or tofu.
The point
One memorizable sauce ratio — soy, sesame oil, rice vinegar, garlic, ginger, sweetener, cornstarch — works for every stir-fry.
