How to Make Beans and Lentils Taste Good

People who say they don't like beans have usually only had bland ones. The bean itself is a blank canvas — the flavor comes from what you do with it. Bland beans are just poorly seasoned beans.
Saute onion and garlic in olive oil. Add spices — cumin, paprika, and a pinch of cayenne work universally. Add your beans (canned is fine, just rinse them) and cook together for a few minutes so the flavors meld. Finish with a squeeze of lemon juice and a drizzle of good olive oil. The acid and fat at the end are what transform beans from boring to delicious. This same approach works for lentils, chickpeas, and every legume.
The point
Beans taste bland because they are underseasoned — saute aromatics, add spices, and finish with acid and fat to transform them.
