What to Do If Your Oil Starts Smoking in the Pan

Smoking oil means it has reached its smoke point and is beginning to break down. At best, it'll taste bitter. At worst, it can catch fire. Act immediately.

Remove the pan from the heat. Do NOT add water — water and hot oil cause explosive splattering. Let it cool on a safe surface. If the oil actually catches fire, cover the pan with a metal lid or a baking sheet to cut off oxygen. Never throw water on an oil fire. Never try to carry a flaming pan. If the fire spreads beyond the pan, leave the kitchen and call emergency services.
