Store Mushrooms in a Paper Bag, Not Plastic — They Need to Breathe

Mushrooms are mostly water, and they release moisture constantly. In a sealed plastic container or bag, that moisture has nowhere to go — the mushrooms sit in their own condensation and turn slimy and brown within days.

A paper bag absorbs excess moisture while still allowing air circulation. Place your mushrooms in a brown paper bag, fold the top loosely, and put it in the fridge. They will stay firm and dry for a week or more instead of two to three days. Do not wash them until you are ready to use them — added water accelerates spoilage.
