The winter one was picked green, shipped thousands of miles, and ripened with gas. Eating with the seasons is not a trend — it is the oldest and simplest way to eat well.

Seasonal produce costs less because supply is high and transport is short. Strawberries in June, squash in October, citrus in winter — when you buy what is abundant, you get better flavor for less money. Your meals become simpler because great ingredients need less work. A ripe peach needs nothing. A perfect ear of corn needs only butter and salt.
