The secret to easy-peel eggs is not about the cooking — it is about the start and the finish. Lower your eggs into already boiling water instead of starting them in cold water. This causes the whites to contract away from the shell immediately, making peeling dramatically easier.

After cooking (6-7 minutes for jammy, 10-12 for hard-boiled), transfer the eggs straight into an ice bath for at least 5 minutes. The rapid cooling shrinks the egg slightly inside the shell. Tap gently, roll to crack all over, and peel under a thin stream of running water. The shell should come off in large, satisfying pieces.
