How to Store Bread So It Stays Fresh Longer

The fridge is bread's worst enemy. Refrigeration accelerates staling — the cold temperature causes the starch molecules to recrystallize faster, making bread go stale in a day or two instead of three to four. Keep bread at room temperature in a paper bag, bread box, or wrapped in a clean kitchen towel for the first two to three days.

For longer storage, slice the loaf and freeze it. Frozen bread toasts beautifully straight from the freezer — no need to defrost. Individual slices thaw in minutes at room temperature if you need soft bread. This two-tier system (room temp for this week, freezer for later) means you always have fresh bread and never throw any away.
