What to Do If a Pan Catches Fire

Don't panic — you have a few seconds to act. Turn off the heat first, then slowly slide a metal lid or baking sheet over the pan to cut off the oxygen. Don't slam it on — that can splash burning oil. Leave the lid on and don't peek for at least 15 minutes; removing it too soon can reignite the flames because the oil is still above its flash point. Never move the pan, and never use water. If the fire spreads beyond the pan or you can't cover it safely, get everyone out of the house, close the kitchen door behind you, and call the fire department from outside. Your house can be rebuilt — you can't.
