What to Do If the Cake Sinks in the Middle

You pulled the cake out and the center collapsed into a crater. It's disappointing, but it happens — and it's usually for one of two reasons: the cake wasn't fully baked when removed, or the oven door was opened too early, causing a temperature drop that deflated the structure.
To salvage this one: fill the dip with frosting, whipped cream, ganache, or fresh fruit. Cut out the sunken center and make it into a trifle or cake pops. For next time: always use the toothpick test — insert into the center, and it should come out clean or with just a few moist crumbs. Don't open the oven door during the first 75% of the baking time. And make sure your baking powder isn't expired.
The point
Fill a sunken cake with frosting or fruit to salvage it — next time, use the toothpick test and don't open the oven door early.
