Squeeze More Juice From a Lemon by Rolling It on the Counter First

Before cutting a lemon, press it firmly on the counter and roll it back and forth several times. You will feel it soften as the internal membranes break. This releases the juice from the pulp cells, making squeezing far more efficient.

A rolled lemon can yield up to twice as much juice as one cut straight from the fridge. For even more, microwave the lemon for 10 seconds before rolling — the heat loosens things further. This works for limes, oranges, and any other citrus fruit.
