How to Cook a Great Steak at Home Without Fancy Equipment
The secret to a restaurant-quality steak is not the grill — it is the preparation. Take the steak out of the fridge 30-40 minutes before cooking and pat it completely dry with paper towels. Season generously with salt and pepper on both sides. Heat a heavy pan (cast iron is ideal) until it is smoking hot.
Add a high-smoke-point oil (avocado, grapeseed, or vegetable), lay the steak away from you, and do not touch it for 3-4 minutes. Flip once and cook another 3-4 minutes for medium-rare. Add butter, garlic, and fresh herbs in the last minute and baste the steak by spooning the melted butter over it. The most important step: let it rest on a cutting board for 5-10 minutes before slicing. This lets the juices redistribute so every bite is tender and flavorful.
