Most people cut off the florets and discard half the vegetable. But broccoli stems have the same mild, slightly sweet flavor — they're just denser and firmer. The tough outer layer is the only part that needs to go.
Peel the outer skin with a vegetable peeler or knife, then slice the stem into coins, matchsticks, or chunks. Roast them alongside the florets, stir-fry them, shred them raw into slaws, or add them to soups and stir-fries. They cook in roughly the same time as the florets if sliced thin enough. You've been paying for the whole broccoli — eat the whole broccoli.
