The trick is having 2-3 "backup meals" that require almost zero effort. Frozen soup you made on a good day. Rice with canned beans and hot sauce. Toast with eggs and avocado. Cereal with milk. These aren't gourmet — they don't need to be. They just need to exist as a default so your tired brain has something to reach for besides the Uber Eats button. Stock your kitchen for your worst days, not your best ones.
