Most home cooks search for better recipes when what they actually need is better heat control. Mastering low, medium, and high heat is the single most important cooking skill. A simple chicken breast becomes either juicy or rubbery based entirely on the temperature of your pan.

High heat is for searing and stir-frying — you want color and crust fast. Medium heat is for sauteing onions, cooking eggs, and most everyday tasks.
