Never Try to Catch a Falling Knife

Your reflexes will tell you to grab it. Override every instinct. Step back and let it fall. A knife that hits the floor can be picked up and cleaned. A knife you reflexively grab by the blade can mean stitches, nerve damage, or a trip to the emergency room.
This applies to any sharp object — scissors, peelers, mandolines. Train yourself until it becomes automatic: if it falls, it falls. Your hands are worth more than any kitchen tool. Clear the area with your feet after it lands, pick it up by the handle.

A falling knife has no handle — step back, let it drop, and pick it up safely from the floor.
